Robin Wilkins says this makes a great one-plate meal. Just make sure you read the labels on the kielbasa carefully, as they vary widely in carb count.
YIELD: 3 servings
INGREDIENTS:
- 2 to 3 tablespoons butter
- 1 medium onion, chopped
- 1 pound Polska Kielbasa or similar low-carb sausage, sliced
- 1 head cabbage, chopped
INSTRUCTIONS:
- Divide the butter between two skillets. Saute the onion and sausage in one and saute the cabbage in the other. The cabbage will overwhelm your frying pan at first, but it will reduce in volume as it fries.
- When cooked to the texture you like, combine the contents of both skillets, and toss.
PER SERVING:
- Using a low-carb sausage, each serving has 8 grams of carbohydrates and 1 gram of fiber, for a total of 7 grams of usable carbs and 21 grams of protein.
