VARIATIONS:

  • Herb Infused: Add a burst of freshness by incorporating fresh herbs into the seasoning mixture. Chopped rosemary, thyme, or sage can complement the flavors of the chicken beautifully. Simply mix the herbs with the other spices before rubbing them onto the chicken.

  • Citrus Twist: For a zesty and tangy flavor profile, add some citrus elements. Stuff the chicken cavity with lemon or orange slices to infuse the meat with a subtle citrus aroma. You can also squeeze fresh lemon or orange juice over the chicken before roasting for an extra citrus kick.

  • Garlic and Herb Butter: Create a flavorful and juicy roast by making a garlic and herb butter mixture. Soften butter and mix it with minced garlic, chopped herbs, salt, and pepper. Carefully separate the skin from the chicken breast and spread the butter mixture underneath. This will help keep the chicken moist and impart delicious flavors.

  • Vegetable Bed: Elevate the dish by placing a bed of vegetables in the roasting pan before placing the chicken on top. Sliced onions, carrots, celery, and potatoes can create a flavorful base that absorbs the chicken juices while roasting. It also makes for a delicious side dish.
