INGREDIENTS:

  • 1 cup water
  • 2 pounds red potatoes, quartered
  • 1/2 cup mayonnaise or vegan mayonnaise, such as Vegenaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon cider vinegar
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste
  • 1/2 cup red onion, chopped
  • 1/2 cup celery, chopped

 

INSTRUCTIONS:

  1. Add the water and quartered red potatoes to a pressure cooker.
  2. Lock the lid into place and bring it to high pressure.
  3. Once high pressure is reached, reduce the heat to low and cook for 3–4 minutes.
  4. Remove from heat and allow the pressure to release naturally.
  5. Drain the potatoes and rinse them with cold water.
  6. In a mixing bowl, whisk together the mayonnaise, yellow mustard, cider vinegar, fresh dill, and season with salt and pepper to taste.
  7. In a large mixing bowl, combine the cooked and cooled potatoes with the chopped red onion and celery.
  8. Add the prepared mayonnaise mixture to the potato mixture.
  9. Gently toss everything together until the potatoes, onion, and celery are evenly coated with the dressing.
  10. Taste the potato salad and adjust the seasoning with more salt and pepper if needed.
  11. Cover the potato salad and refrigerate until it’s well chilled.
  12. Serve and enjoy this delicious Dill Potato Salad!
