INGREDIENTS:

  • 1 whole chicken (3 1/2 to 4 pounds), rinsed and patted dry (giblets removed)
  • 40 garlic cloves (3 to 4 heads), unpeeled
  • Coarse salt and ground pepper
  • 2 tablespoons butter, room temperature
  • 6 sprigs fresh thyme

 

INSTRUCTIONS:

  1. Preheat the oven to 475 degrees Fahrenheit (245 degrees Celsius). Place the garlic cloves in a medium bowl and cover with another bowl of the same size, creating a dome shape. Hold the bowls together tightly and shake vigorously for about 30 seconds until the garlic skins loosen. Remove and discard the skins, and set the garlic aside.
  2. Place the chicken in a large ovenproof skillet or roasting pan. Rub the chicken all over with 1 tablespoon of butter and season with salt and pepper. Add the thyme sprigs, garlic cloves, and the remaining tablespoon of butter to the skillet.
  3. Roast the chicken in the preheated oven, basting occasionally with the pan juices and stirring the garlic cloves, until an instant-read thermometer inserted into the thickest part of a thigh (avoiding the bone) registers 165 degrees Fahrenheit (74 degrees Celsius). This will take approximately 45 to 60 minutes.
  4. Transfer the roasted chicken to a platter and let it rest for 10 minutes. Carve the chicken and serve it with the roasted garlic cloves and pan juices, which add an extra burst of flavor to the dish.
