  • 1/4 teaspoon cayenne (optional)
  • 1 tablespoon sugar
  • 1 teaspoon minced garlic
  • One 3- to 4-pound pork loin roast, bone in, one 2- to 3-pound boneless roast, or a similar-sized portion of shoulder or fresh ham
  • 1 1/2 cups dry white wine or stock, plus more if necessary
  • 1 tablespoon butter (optional)

 

INSTRUCTIONS:

  1. Preheat the oven to 450°F. Create a rub by mixing a generous amount of salt and freshly ground black pepper with minced rosemary, cayenne (if using), sugar, and minced garlic. Rub this flavorful mixture all over the pork roast.
  2. Place the seasoned pork roast in a roasting pan, using a rack if the roast is boneless or simply placing it directly in the pan if the bone is still intact. Roast the pork, undisturbed, for 15 minutes at 450°F.
  3. After the initial 15 minutes, pour about 1/2 cup of dry white wine or stock over the roast. Lower the oven temperature to 325°F. Continue roasting, basting the pork every 15 minutes with approximately 1/4 cup of liquid. Use the accumulated pan juices to baste the meat or add more liquid as needed.
  4. After a total cooking time of about 11/4 hours (approximately 11/2 hours in total), start checking the roast for doneness. The internal temperature of the pork should register 145–150°F on an instant-read thermometer.
  5. Once the roast is done, transfer it to a warm platter. Place the roasting pan on the stove over 1 or 2 burners, set to medium-high heat. If there is a significant amount of liquid in the pan, reduce it to about 3/4 cup while scraping the bottom with a wooden spoon to release any browned bits. If the pan is dry, add 1 cup of liquid and follow the same process. Optionally, stir in the butter to enrich the sauce.
