Red Wine and Blackberry Sorbet

Red Wine and Blackberry Sorbet is a delightful frozen dessert that combines the rich flavors of red wine and the natural sweetness of blackberries. This refreshing sorbet is made by simmering a mixture of sugar, red wine, blackberries, and water until the blackberries become soft and release their vibrant color and flavor. The mixture is then strained to remove any solids, chilled, and frozen to achieve a smooth and luscious texture. The result is a beautiful ruby-hued sorbet with a balanced combination of fruity sweetness and the subtle complexity of red wine. It’s a perfect dessert to enjoy on a warm summer day or as a light and elegant ending to a special meal. Wild blackberry bushes line the country roads in Italy, tempting passersby to brave the thorns and pick a basketful. Most of the berries are used for jam, but I was intrigued by this sorbet made with blackberries and red wine. Serve it with chocolate cookies for dessert.

SERVES: 8

INGREDIENTS:

1 cup sugar
1 cup dry red wine
12 ounces blackberries
2 cups water

 

INSTRUCTIONS:

  1. In a medium saucepan, combine the sugar and wine and bring to a simmer over medium heat, stirring until the sugar is dissolved.
  2. Add the blackberries and water to the saucepan.
  3. When the liquid returns to a simmer, turn the heat down slightly and cook for 20 minutes, or until the blackberries are very soft.
  4. Let the mixture cool slightly.
  5. Pour the mixture into a sieve set over a bowl.
  6. Press on the berries with a rubber spatula to extract all the liquid; discard the solids.
  7. Cover the liquid and refrigerate until chilled, at least several hours or overnight.
  8. Freeze the chilled mixture in an ice cream maker according to the manufacturer’s instructions.
  9. Pack the sorbet into a container, cover it, and freeze until firm, about 2 hours or up to 3 days.
  10. Prior to serving, let the sorbet sit at room temperature for 10 to 15 minutes to soften slightly.
  11. Serve the sorbet and enjoy!

 

VARIATIONS:
