Poaching pears in white wine flavored with raspberries tints them a lovely pink. Light and refreshing, this dessert is also a treat for the eyes.

SERVES: 6

INGREDIENTS:

  • 1 cup fresh or frozen raspberries
  • ¾ cup sugar
  • A 2-inch strip of lemon zest
  • 2 cups dry white wine
  • 6 firm ripe pears, such as Bartlett, peeled
  • Whipped cream and raspberries for garnish (optional)

 

INSTRUCTIONS:

  1. In a deep wide skillet, combine the raspberries, sugar, lemon zest, and wine. Bring the mixture to a simmer over medium-low heat, stirring until the sugar dissolves. Let it simmer for 10 minutes.
  2. Add the peeled pears to the skillet, laying them down in the syrup. Cover the skillet and cook, basting and turning the pears once or twice, until they are tender when pierced in the thickest part. This usually takes about 10 minutes.
  3. Transfer the cooked pears to a shallow bowl, standing them upright.
  4. Strain the syrup from the skillet, pressing down on the solids to extract the liquid. Pour the syrup over the pears.
  5. Refrigerate the pears until thoroughly chilled. They can be made up to 3 days ahead, covered with plastic wrap, and refrigerated.
  6. To serve, place the chilled pears on serving dishes. Drizzle them with the syrup. Garnish with whipped cream and fresh berries, if desired.
