It adds bright color and a nice bite to salads and has the advantage of not wilting easily. If the grapes in the market don’t look good, substitute a cut-up apple or pear or even orange wedges.

INGREDIENTS:
- 1½ tablespoons minced fresh parsley
- 1 tablespoon minced scallion
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 2 teaspoons white balsamic or apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and freshly ground pepper
- 1 head radicchio (about 8 ounces), torn into bite-size pieces
- 1 cup halved seedless green grapes
INSTRUCTIONS:
- In a small bowl, whisk together the minced parsley, minced scallion, extra-virgin olive oil, honey, white balsamic or apple cider vinegar, Dijon mustard, and salt and pepper to taste.
- In a serving bowl, toss together the torn radicchio leaves and halved seedless green grapes.
- Pour the dressing over the radicchio and grapes.
- Toss well to coat the ingredients with the dressing.
