INGREDIENTS

INSTRUCTIONS

1. Preheat your oven:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease each muffin cup.

2. Make the Muffin Batter:

  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and all the ground spices (cinnamon, nutmeg, cloves, and ginger). Set aside.
  • In another large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the mashed bananas, pumpkin puree, and vanilla extract until well combined.

3. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.

4. Fill the Muffin Cups:

  • Spoon the muffin batter into each muffin cup, filling them about 2/3 full.

5. Bake:

  • Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

6. Cool and Serve:

  • Allow the Pumpkin Banana Muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
