INGREDIENTS

For the wontons:

  • 175g/6oz cooked prawns, peeled and deveined
  • 1 garlic clove, crushed
  • 1 spring onion, finely chopped

  • 1 tablespoon Thai fish sauce
  • 1 tablespoon chopped fresh coriander leaves
  • 1 small egg, separated
  • 12 wonton wrappers

  • 1 litre/13⁄4pt beef stock
  • 1 tablespoon Thai fish sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon Chinese rice wine
  • 2 small fresh red chillies, seeded and sliced
  • 2 spring onions, sliced

 

PREPARATIONS

  1. Finely chop the cooked prawns and transfer them to a glass or ceramic bowl.
  2. Stir in the crushed garlic, chopped spring onion, light soy sauce, Thai fish sauce, chopped fresh coriander leaves, and the egg yolk.
  3. Lay the wonton wrappers on a work surface in a single layer. Place about 1 tablespoon of the filling mixture in the center of each wrapper.
  4. Brush the edges of the wonton wrappers with egg white. Fold each wrapper into a triangle, pressing lightly to seal. Bring the two bottom corners of the triangle around to meet in the center, securing with a little egg white.
  5. Cover the prepared wontons with a damp tea towel or cloth until needed.
  6. In a large heavy saucepan, bring the beef stock, Thai fish sauce, light soy sauce, Chinese rice wine, sliced chillies, and sliced spring onions to a boil over medium heat.
  7. Carefully drop the wontons into the simmering soup and cook for 4-5 minutes, or until they are thoroughly heated and cooked through.
  8. Serve the Prawn Wonton Soup immediately, garnished with additional sliced spring onions, if desired.

 

YIELD

This recipe yields approximately 12 prawn wontons and serves about 4 people, depending on portion sizes.
