INGREDIENTS:

  • 6 to 9 potatoes
  • 1 large onion, quartered, with cloves stuck in it
  • 2 pieces of celery (or 1/4 teaspoon of celery salt or celery seed)
  • Some mace
  • 1 bay leaf
  • 6 peppercorns
  • 1 quart of milk
  • 1 small half cup of milk (reserved)
  • 1 tablespoon of flour
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tablespoon of butter
  • 1 teaspoon of minced parsley

 

INSTRUCTIONS:

  1. BOIL POTATOES: Wash 6 to 9 potatoes and place them in boiling water. Boil the potatoes for about twenty minutes to half an hour, depending on their size. They should be tender and easily pierced with a fork.
  2. PREPARE SEASONINGS: In a double boiler, combine 1 large onion (quartered and with cloves stuck in it), 2 pieces of celery (or 1/4 teaspoon of celery salt or celery seed), a pinch of mace, 1 bay leaf, and 6 peppercorns.
  3. HEAT MILK: Pour 1 quart of milk into the double boiler with the seasonings. Reserve 1 small half cup of milk separately.
  4. MIX FLOUR WITH RESERVED MILK: In a bowl, mix 1 tablespoon of flour with the reserved 1/2 cup of milk until it forms a smooth paste.
  5. THICKEN MILK: As the milk in the double boiler begins to boil, slowly stir in the flour and milk mixture. Continue stirring and let it cook for ten minutes longer. This will thicken the milk mixture.
  6. PEEL AND MASH POTATOES: Once the potatoes are done boiling, drain off the water and peel them. Mash the potatoes until they are light and fluffy.
  7. COMBINE POTATOES AND MILK: Add the mashed potatoes to the boiling milk mixture. Stir well to combine, ensuring there are no lumps.
  8. SEASON: Season the soup with salt and pepper to taste. Adjust the seasoning according to your preferences.
  9. STRAIN AND FINISH: Pass the potato and milk mixture through a sieve to achieve a smooth and creamy texture. Return the soup to the double boiler.
  10. ADD BUTTER AND PARSLEY: Stir in 1 tablespoon of butter and 1 teaspoon of minced parsley. Allow the soup to come to a boil once more.
  11. SERVE: Ladle the creamy potato soup into serving bowls. It’s now ready to be enjoyed.
