YIELD: This could feed 2
INGREDIENTS:
- 2 large ribs celery, or 3 small ones
- 1/2 green pepper
- 1/4 medium, sweet red onion
- 1 can chunk light tuna
- 1/3 cup mayonnaise
INSTRUCTIONS:
- Dice up the vegetables. This should come to 1 1/2 to 2 cups of veggies.
- Add the tuna and mayo, and mix it up. You can eat this with fiber crackers, or stuff it into a tomato, but it’s awfully good just eaten with a fork, right out of the mixing bowl.
PER SERVING:
- 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 21 grams of protein.
