The balsamic vinegar gives these a tangy-sweet flavor.
YIELD: 2 or 3 servings
INGREDIENTS:
- 2 tablespoons olive oil
- 2 or 3 pork rib chops, 2 inches thick
- 3/4 cup chicken broth
- 3 tablespoons balsamic vinegar
- 3 cloves garlic, crushed
- 1/4 teaspoon guar or xanthan
INSTRUCTIONS:
- Put the oil in a large, heavy skillet over medium-high heat, and sear the chops in the oil until well-browned on both sides.
- Add the broth, vinegar, and garlic to the skillet.
- Cover the skillet, turn the burner to low, and let the chops simmer for 1 hour.
- Remove the chops to a serving platter or serving plates.
- Put the liquid from the pan into a blender and add the guar or xanthan.
- Run the blender for a few moments to thicken the sauce.
- Pour the thickened sauce over the chops and serve.

- 2 grams of carbohydrates, a trace of fiber, and 36 grams of protein.
