When Cheryl spent time in Mallorca as a twenty-something, she was fascinated by the striking ruby drink sent over by a prospective suitor. She was much more taken by what turned out to be a pomegranate beverage than with the admirer. She’s always remembered the experience, though, because it was her first taste of the then hard-to-find and exotic fruit. We have subsequently discovered that all manner of pomegranate concoctions turn out to have Mallorcan roots, including this type of colorful sauce. It’s a fine accompaniment to pork, perhaps spooned over slices of a rotisserie-grilled loin or simply grilled tenderloin or chops.

MAKES: ABOUT 2 CUPS

 

INGREDIENTS:

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lard or more extra-virgin olive oil
  • 1 large onion, finely chopped
  • ½ cup dry white wine
  • 1½ cups pomegranate juice
  • 1 cup heavy cream
  • Seeds of 1 pomegranate
  • ¾ teaspoon kosher salt or coarse sea salt, or more to taste
  • ½ teaspoon freshly ground black pepper

 

INSTRUCTIONS:

  1. In a skillet, warm the olive oil and lard over medium heat. Add the chopped onion and cook until soft and translucent, which should take about 7 minutes.
  2. Pour in the dry white wine, some of which will evaporate almost immediately. Then, add the pomegranate juice and the heavy cream to the skillet. Continue cooking the sauce until it reduces by about half, approximately 15 minutes.
  3. Stir in the pomegranate seeds, kosher salt, and black pepper. Cook the sauce for an additional 5 minutes.
  4. Serve the warm Pomegranate Cream Sauce with your desired main course. The sauce can also be refrigerated in a covered container for up to a week, but be sure to reheat it before using.
