Polenta, a comforting and versatile dish, serves as a delightful base for an array of stews and ragouts. Whether paired with a chunky tomato sauce, sautéed wild mushroom ragout, or a hearty vegetable stew, polenta elevates your dining experience with its creamy texture and rich flavor. Furthermore, once allowed to chill, it can be transformed by grilling or frying into a delectable treat. In this recipe, we’ll guide you through creating a classic Polenta with Butter and Cheese that you can enjoy as a standalone dish or as a canvas for your favorite toppings.

SERVES 4

INGREDIENTS:

  • 1 teaspoon salt
  • 4 cups water or stock, boiling
  • 1 cup coarse yellow cornmeal (polenta)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter

INSTRUCTIONS:

  1. Prepare the Polenta Base: Begin by adding the salt to the boiling water or stock. While stirring continuously with a stiff wire whisk, gradually pour the coarse yellow cornmeal (polenta) into the hot liquid in a steady stream. Be vigilant about whisking to ensure a smooth texture, whisking out any lumps that may form during this process. Continue whisking diligently until the mixture noticeably thickens.
  2. Simmer and Stir: Once the mixture has thickened, reduce the heat to maintain a very low simmer. At this point, you should observe only the occasional bubble gently rising through the polenta. Be cautious as the mixture is extremely hot and can splatter, posing a hazard. Stir the polenta regularly using a wooden spoon until it reaches its full thickening consistency, which typically takes around 25 minutes.
  3. Add Cheese and Butter: After achieving the desired thickness, introduce the grated Parmesan cheese and the tablespoon of butter into the polenta. Stir these ingredients into the mixture until they are fully incorporated, enhancing the richness and flavor of the dish. Remove the polenta from the heat source.
  4. Serve or Prepare for Grilling/Frying: You have two delectable options at this point. You can serve the polenta immediately, savoring its creamy goodness as is. Alternatively, if you plan to take it up a notch, allow the polenta to cool. Once cooled and firm, it becomes an ideal candidate for grilling or frying. These methods impart a delightful crispy texture to the polenta, offering a whole new dimension of taste.

Polenta with Butter and Cheese is a versatile classic that can be enjoyed in various ways. Whether you savor it as a side dish with stews and ragouts or take the extra step to grill or fry, this dish promises a comforting and indulgent experience. Its creamy texture, complemented by the rich flavors of cheese and butter, will leave you craving more. Bon appétit!
