  2. Place the rinsed beans in a saucepan with 7 cups of water. Bring the mixture to a boil, then reduce the heat to a simmer. Cook the beans until they are very tender, which should take approximately 1 ½ hours.
  3. In a large soup pot, heat the olive oil over a medium flame.
  4. Add the diced onions, salt, and pepper. Sauté the mixture until the onions begin to brown slightly, which typically takes about 10 minutes.
  5. Stir in the crushed garlic and dried thyme. Cook for an additional 2 minutes.
  6. Add the cooked pinto beans, along with their cooking liquid, to the pot.
  7. Pour in the vegetable stock or water.
  8. Bring the soup to a boil, then reduce the heat to a simmer. Allow it to simmer uncovered, stirring occasionally, until the beans start to break apart. This should take around 30 minutes.
  9. Carefully transfer the soup to a blender in small batches, ensuring you don’t splash hot liquid. Blending works best for achieving a smooth consistency.
  10. Adjust the seasoning of the soup to your taste preferences.
