INGREDIENTS

  • 850ml/1pt 8fl oz unsweetened pineapple juice
  • 375g/13oz granulated sugar
  • 3 tablespoons freshly squeezed lemon juice
  • 1 egg white, lightly beaten

  • Stir in the freshly squeezed lemon juice and pour the mixture into a metal tray. Cover the tray with a sheet of greaseproof paper and freeze it for 2 hours.
  • Transfer the partially frozen mixture to a blender or food processor and process it until it reaches a slushy consistency. Return the mixture to the metal tray and place it back in the freezer.
  • Repeat the process of beating and freezing the mixture twice more, allowing it to firm up between each round. After the final beating, add the lightly beaten egg white to the mixture and process it until it becomes smooth.
  • Return the mixture to the metal tray, cover it with greaseproof paper, and freeze until it reaches a firm consistency.
