Pears Poached In White Wine With Strawberry Sauce

  • 8 whole cloves
  • 2 whole cinnamon sticks
  • 1 cup of sugar, divided
  • 4 Bosc pears, peeled, halved lengthwise, seeds scooped out
  • 1 pint of strawberries, hulled and halved
  • 1 teaspoon of vanilla
  • 8 sprigs of fresh mint

 

INSTRUCTIONS:

  1. In a large pot (4–5 quarts), combine the white wine, lemon zest strips, cloves, cinnamon sticks, and 1/2 cup of sugar. Bring this delightful mixture to a boil.
  2. Once it’s boiling, reduce the heat to a simmer. Carefully add the pears, arranging them so they are mostly submerged in the liquid. Cover the pot tightly and let the pears simmer gently for 5 minutes. Then, remove the pot from the heat and allow the pears to steep in the flavorful liquid for 20 minutes. Afterward, chill them in the refrigerator.
  3. In a blender, combine the fresh strawberries, the remaining 1/2 cup of sugar, and the vanilla. Blend until you achieve a smooth and velvety sauce. If needed, add a few drops of water to get things moving smoothly.
  4. To serve, spoon the vibrant strawberry sauce onto dessert plates, creating small pools in the middle of each plate.
  5. Place the poached pears on top of the sauce, cut-side down. This not only looks elegant but also allows the pears to absorb some of the strawberry goodness.
  6. Garnish each pear with a sprig of fresh mint at the stem end, adding a final touch of freshness and color to your dessert.
