INGREDIENTS:

  • Butter for the pan
  • 1/2 cup granulated sugar, plus 1 tablespoon for the baking dish
  • About 1 pound pears, peeled, halved, and cored
  • 3 eggs
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup cream or yogurt
  • 3/4 cup milk
  • Pinch of salt
  • Confectioners’ sugar for the top

 

INSTRUCTIONS:

  1. Heat the oven to 375°F. Butter a gratin or baking dish that can hold the fruit in a single layer. Sprinkle the tablespoon of sugar over the dish and swirl it around to coat all inner surfaces.
  2. Place the pears in the dish, with the cut sides facing down.
  3. In a bowl, whisk the eggs until foamy. Add the remaining granulated sugar and continue whisking with a whisk or electric mixer until the mixture becomes foamy and fairly thick.
  4. If using a vanilla bean, split it in half lengthwise and scrape the seeds into the egg mixture using a small sharp knife. Discard the pod.
  5. Add the flour to the egg mixture and continue beating until the batter becomes thick and smooth.
  6. Pour in the cream, milk, vanilla extract (if using), and salt. Mix well until all the ingredients are fully incorporated.
  7. Pour the batter over the fruit in the baking dish.
  8. Bake the clafouti for approximately 20 minutes or until it turns nicely browned on top and a knife inserted into it comes out clean.
  9. Once baked, remove the clafouti from the oven and sift some confectioners’ sugar over the top.
  10. Serve the clafouti warm or at room temperature.

 

VARIATIONS:

  • Fluffy Raspberry Clafouti: To make it lighter, whip the cream to medium peaks and fold it into the batter after adding the milk in Step 3.

 

  • Dried Fruit Clafouti: Instead of pears, use 1 1/2 cups sliced dried fruit such as figs, raisins, prunes, dates, or apricots (or a combination). Soak the dried fruit in warm water or a spirit like rum, bourbon, or port wine. Drain and squeeze them dry before adding to the dish. Optionally, sprinkle chopped hazelnuts on top before baking.
