INGREDIENTS:
Peanut Sauce
- 1 tsp pure (untoasted) sesame oil
- 3 tbsp (48 g) creamy peanut butter (soy-free if needed)
- 3 tbsp (45 ml) soy sauce (or tamari for gluten-free, or coconut aminos for soy-free)
- 1 tsp chili garlic sauce
- 1 tbsp (15 ml) unseasoned rice vinegar
- 1 tsp agave or pure maple syrup
Vegetables
- 2 tbsp (30 ml) olive oil
- ½ medium-sized red onion, sliced (about ½ cup [80 g])
- 2 cups (256 g) chopped carrot
- 3 cups (165 g) chopped broccoli
- 2 cloves garlic, peeled and minced, or 2 tsp (6 g) jarred minced garlic
- 1 packed cup (37 g) baby spinach
For Topping
- Sesame seeds
INSTRUCTIONS:
- Make the Peanut Sauce:
- In a small bowl, whisk together all the peanut sauce ingredients. Set aside.
- Prepare the Vegetables:
- In a large sauté pan, heat the olive oil over medium-low heat.
- Add the sliced red onion, chopped carrot, and broccoli to the pan.
- Cook, stirring often, for 13 to 15 minutes, or until the vegetables are fork-tender. Add water, if necessary, to prevent sticking.
- Add Garlic and Spinach:
- Stir in the minced garlic and baby spinach.
- Cook for 30 seconds to 1 minute, or until the spinach wilts and the garlic becomes fragrant.
- Incorporate the Peanut Sauce:
- Pour the prepared peanut sauce over the cooked vegetables.
- Stir well to coat the vegetables evenly with the sauce.
- Serve:
- Remove the pan from heat.
- Serve the Peanut Sauce Stir-Fried Vegetables immediately.
- Optionally, sprinkle sesame seeds on top for added flavor and garnish.
