This is crispety crunchety peanut buttery goodness in ice cream form.
INGREDIENTS: YIELD: 1 QUART
- 1 vanilla bean, split and seeded
- 1¼ cup half and half
- 1¼ cups smooth peanut butter
- ¼ cup brown sugar
- ½ cup granulated sugar
- 2 cups heavy cream
- Pinch salt
- 1 tablespoon vanilla extract
- 10 Butterfinger miniatures
INSTRUCTIONS:
- Heat vanilla bean, half and half, peanut butter, and sugars in a medium saucepan until steaming with little bubbles around the edges. Remove from heat. Add heavy cream, salt, and vanilla. Cover and refrigerate overnight.
- Add to ice cream maker and follow manufacturer’s instructions for freezing. Just before storing, fold in whole Butterfinger miniatures; keeping them whole will prevent the crunchy center from softening or dissolving.
