INGREDIENTS:
- 1 lb. (500 g) peaches
- 5 amaretti cookies, crushed
- 3 tbsp. plus 2 tsp. (20 g) unsweetened cocoa
- 2 large eggs
- 1/4 cup plus 1 1/2 tbsp. (70 g) sugar
INSTRUCTIONS:
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment.
- Halve the peaches, remove the pits, and use a spoon to scoop out a bit more flesh from the center. Chop it up and mix it with the 2 egg yolks, amaretti and cocoa.
- In a bowl with an electric mixer, beat the egg whites with the sugar until stiff peaks form. Fold them into the amaretti mixture.
- Arrange the peach halves on the prepared baking sheet. Fill with the amaretti mixture and bake for about 30 minutes.
- Serve warm or cold.
