PEACHES STUFFED WITH AMARETTI COOKIES

INGREDIENTS:

  • 1 lb. (500 g) peaches
  • 5 amaretti cookies, crushed
  • 3 tbsp. plus 2 tsp. (20 g) unsweetened cocoa
  • 2 large eggs
  • 1/4 cup plus 1 1/2 tbsp. (70 g) sugar

 

INSTRUCTIONS:

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment.
  2. Halve the peaches, remove the pits, and use a spoon to scoop out a bit more flesh from the center. Chop it up and mix it with the 2 egg yolks, amaretti and cocoa.
  3. In a bowl with an electric mixer, beat the egg whites with the sugar until stiff peaks form. Fold them into the amaretti mixture.
  4. Arrange the peach halves on the prepared baking sheet. Fill with the amaretti mixture and bake for about 30 minutes.
  5. Serve warm or cold.
