Peach and Toasted Almond Preserves combine the luscious sweetness of ripe peaches with the rich, nutty flavor of toasted almonds. INGREDIENTS:
- 6 fresh ripe peaches
- 1 cup water
- 1 (8-ounce) package dried apricots, diced
- 1/2 cup toasted almonds
- 1 1/2 cups orange juice
- 1/4 cup lemon juice
- 4 1/4 cups granulated cane sugar
- 2 whole cloves
- 1 (3-inch) cinnamon stick
- Pinch of salt
- 1 (1 3/4-ounce) package pectin powder
INSTRUCTIONS:
- Start by using a skewer or toothpick to poke several holes in each of the fresh peaches. Then, place the peaches in your pressure cooker and pour the water over them. Securely lock the lid on the pressure cooker and bring it to high pressure. Maintain this pressure for 3 minutes.
- Quickly release the pressure and remove the lid. Carefully transfer the peaches to a large bowl filled with ice water or place them under cold running water. Once they have cooled, peel the peaches and cut them into small pieces, discarding the pits.
- Add the peeled and diced peaches, dried apricots, toasted almonds, orange juice, lemon juice, granulated cane sugar, cloves, cinnamon stick, and a pinch of salt to the water remaining in the pressure cooker. Stir all the ingredients together to combine.
- Lock the lid securely in place and bring the pressure cooker back to high pressure. Maintain this pressure for 2 minutes.
- Remove the pressure cooker from the heat and quickly release the pressure. Remove the lid and take out the cloves and cinnamon stick, discarding them. Now, stir the pectin powder into the fruit mixture.
- Return the pressure cooker to the heat source and bring the mixture to a rolling boil over medium-high heat. Stir continuously during this process.
- While boiling, be sure to skim off any foam that forms on the surface. Discard the foam.
- Ladle the prepared preserves into hot, sterilized glass containers or jars, leaving approximately 1 inch of headspace. Seal the containers or jars securely.
- Allow the preserves to cool, and then refrigerate them for up to 5 weeks or freeze them for up to 8 months. If you prefer long-term storage, you can follow the instructions that came with your canning jars to process the preserves for shelf storage.
NOTE:
- Toasting nuts is simple and enhances their flavor. Preheat your oven to 350°F and spread the nuts in a shallow baking pan. Stir occasionally and bake for approximately 8 minutes, or until the nuts become fragrant and golden brown. You can also toast nuts in a frying pan over medium-high heat, stirring and shaking the pan constantly for about 5 minutes or until they turn golden brown.
