A popular salad that can be served with anything.
SERVES: 4
INGREDIENTS:
- 3 tomatoes
- 2 yellow onions
- 4 cups (125 g) chopped parsley leaves
- ⅖ cup (12 g) chopped fresh mint
- ¾ cup (105 g) bulgur
- 1½ teaspoons salt
- ¾ teaspoon black pepper
- ⅖ cup (95 ml) lemon juice
- ⅖ cup (95 ml) olive oil
- Lettuce leaves and lemon wedges for decoration
INSTRUCTIONS:
- Wash the tomatoes, slice them thinly, and cut them into small pieces.
- Finely chop the yellow onions. In a bowl, mix the onions together with the tomatoes, chopped parsley, and chopped mint.
- Rinse the bulgur twice and press out all the water. Add the rinsed bulgur to the bowl with the vegetables.
- Season the mixture with salt, black pepper, lemon juice, and olive oil. Mix everything thoroughly.
- Serve the salad cold. You can decorate it with lettuce leaves and lemon wedges for added presentation.
