A popular salad that can be served with anything.

SERVES: 4

INGREDIENTS:

  • 3 tomatoes
  • 2 yellow onions
  • 4 cups (125 g) chopped parsley leaves
  • ⅖ cup (12 g) chopped fresh mint
  • ¾ cup (105 g) bulgur
  • 1½ teaspoons salt
  • ¾ teaspoon black pepper
  • ⅖ cup (95 ml) lemon juice
  • ⅖ cup (95 ml) olive oil
  • Lettuce leaves and lemon wedges for decoration

 

INSTRUCTIONS:

  1. Wash the tomatoes, slice them thinly, and cut them into small pieces.
  2. Finely chop the yellow onions. In a bowl, mix the onions together with the tomatoes, chopped parsley, and chopped mint.
  3. Rinse the bulgur twice and press out all the water. Add the rinsed bulgur to the bowl with the vegetables.
  4. Season the mixture with salt, black pepper, lemon juice, and olive oil. Mix everything thoroughly.
  5. Serve the salad cold. You can decorate it with lettuce leaves and lemon wedges for added presentation.
