Using a medley of spices as flavoring, and honey as the sweetener, makes a delicious and aromatic syrup for these orange slices.

MAKES: About 1 quart

INGREDIENTS:

  • 6 oranges, cut into ¼-inch slices
  • 1¾ cups white wine vinegar
  • 1¼ (rounded) cups sugar
  • ⅓ cup clear, pale honey
  • 1 small cinnamon stick
  • 2 tsp whole coriander seeds
  • 1 tsp whole cloves

INSTRUCTIONS:

  1. In a pan, place the orange slices and add enough water to cover them. Bring the water to a boil and let the slices simmer for 1 hour until the zest becomes tender.
  2. Once the zest is tender, strain off the water and discard it.
  3. In another pan, combine all the remaining ingredients, including sugar and honey. Heat the mixture gently while stirring to dissolve the sugar and honey completely.
  4. Add the cooked orange slices to the pan and let them simmer for an additional 30 minutes until the zest becomes translucent.
  5. Prepare sterilized jars and pack the simmered oranges into them.
  6. Strain the syrup to remove the spices, then return it to the pan. Bring the syrup to a rapid boil and let it boil for 10 minutes to reduce and thicken.
  7. Carefully pour the reduced syrup into the jars, filling them to the brim. Ensure the jars are tightly sealed.
