Using a medley of spices as flavoring, and honey as the sweetener, makes a delicious and aromatic syrup for these orange slices.
MAKES: About 1 quart
INGREDIENTS:
- 6 oranges, cut into ¼-inch slices
- 1¾ cups white wine vinegar
- 1¼ (rounded) cups sugar
- ⅓ cup clear, pale honey
- 1 small cinnamon stick
- 2 tsp whole coriander seeds
- 1 tsp whole cloves
INSTRUCTIONS:
- In a pan, place the orange slices and add enough water to cover them. Bring the water to a boil and let the slices simmer for 1 hour until the zest becomes tender.
- Once the zest is tender, strain off the water and discard it.
- In another pan, combine all the remaining ingredients, including sugar and honey. Heat the mixture gently while stirring to dissolve the sugar and honey completely.
- Add the cooked orange slices to the pan and let them simmer for an additional 30 minutes until the zest becomes translucent.
- Prepare sterilized jars and pack the simmered oranges into them.
- Strain the syrup to remove the spices, then return it to the pan. Bring the syrup to a rapid boil and let it boil for 10 minutes to reduce and thicken.
- Carefully pour the reduced syrup into the jars, filling them to the brim. Ensure the jars are tightly sealed.
