INSTRUCTIONS

  1. Prepare the Onions:
    • Place the unpeeled onions into a saucepan of boiling water.
    • Add half of the salt and boil them for approximately 30 minutes.
    • Drain and allow the onions to cool. Once cooled, remove the outside skin.
  2. Create the Filling:
    • Using the handle of a teaspoon, carefully scoop out the center of the onions, saving this portion for later use.
    • In a mixing bowl, combine the boiled rice, chopped English walnut meats, remaining salt, pepper, and the raw egg. Mix these ingredients thoroughly.
  3. Fill the Onions:
    • Stuff each onion with the prepared rice and nut mixture, ensuring they are evenly filled.
  4. Bake the Onions:
    • Place the stuffed onions in a baking pan.
    • Brush the tops of the onions with melted Crisco.
  5. Bake in a Moderate Oven:
    • Bake the stuffed onions in a moderate oven for approximately 30 minutes, or until they are cooked through and have a golden-brown top.
  6. Prepare the Sauce:
    • Chop very fine the portion of the onions that were removed from the center.
    • Press this pulp through a sieve to extract the juices.
    • Add this pulp to a cup of tartare sauce and mix well.
