- 1 can (14 ounces) diced tomatoes or 2-3 fresh tomatoes, chopped
- 1 teaspoon ground crayfish (optional, for flavor)
- 1 teaspoon ground cayenne pepper (optional, for heat)
- 4-6 cups chicken or vegetable broth
- Salt and black pepper, to taste
For the Protein (Choose One or Combine):
- 1 pound (about 450g) meat (beef, goat, or chicken), cubed
- 1/2 pound (about 225g) fresh fish or shrimp, cleaned and deveined
- 1 cup cooked, shredded smoked fish (optional)
For Vegetables (Choose One or Combine):
- 2 cups chopped spinach, ugu (fluted pumpkin), or collard greens
- 1 cup sliced okra (additional okra, not for the soup base)
- 1 cup sliced garden egg leaves or kale (optional)
- 1 cup sliced bell peppers (red, green, or yellow, for color and flavor)
For Serving (Optional):
- Fufu (such as pounded yam, eba, or garri) or cooked rice
INSTRUCTIONS
- Prepare the Okra:
- Wash and trim the ends of the okra pods. Slice them into rounds or chop them into small pieces. Set aside.
- Sauté the Aromatics:
- In a large soup pot or Dutch oven, heat the palm oil or vegetable oil over medium heat.
