  • ½ cup (75 g) raisins
  • ½ cup (120 ml) egg substitute
  • 1½ cups (355 ml) buttermilk
  • ½ cup (170 g) molasses

 

PREPARATION:

  1. In a mixing bowl, combine the flour, sugar, baking soda, oats, bran cereal, and raisins.
  2. Add the egg substitute, buttermilk, and molasses to the dry ingredients and mix well until all the ingredients are fully incorporated.
  3. Grease two 1-pound (445 g) coffee cans, a 2-quart (1.9 L) mold, or a 2-pound (900 g) can with nonstick baking spray.
  4. Divide the bread batter evenly between the prepared containers.
  5. Place the cans or mold in the slow cooker and cover them with 2 to 3 paper towels. This helps absorb excess moisture during cooking.
  6. With the slow cooker’s cover slightly ajar, cook the bread on high for approximately 3 hours or until a toothpick inserted into the center comes out clean.
  7. Once cooked, let the bread stand in the cans or mold for 10 minutes, then turn them out onto a cooling rack to cool completely.
