  • 1 tablespoon extra-virgin olive oil
  • 1 shallot, minced
  • 2 cups water
  • 1½ cups oat berries (groats), rinsed
  • Salt and pepper
  • ¾ cup walnuts, toasted and chopped
  • ½ cup dried cherries
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon balsamic vinegar
  • 2 ounces Gorgonzola cheese, crumbled (½ cup)

 

INSTRUCTIONS:

  1. In a large saucepan, heat the extra-virgin olive oil over medium heat until shimmering. Add the minced shallot and cook until softened, which should take about 2 minutes. Stir in the water, oat berries, and ¼ teaspoon of salt. Bring the mixture to a simmer. Reduce the heat to low, cover the saucepan, and continue to simmer until the oat berries are tender but still slightly chewy, typically within 30 to 40 minutes.
  2. Remove the saucepan from the heat, and lay a clean folded dish towel underneath the lid. Let the pilaf sit for 10 minutes. Fluff the oat berries with a fork and fold in the toasted, chopped walnuts, dried cherries, and minced fresh parsley. Season the pilaf with salt and pepper to taste and drizzle it with balsamic vinegar. Serve the pilaf, and before serving individual portions, sprinkle each with crumbled Gorgonzola cheese.
