INGREDIENTS:

  • ½ cup of sifted flour
  • ¼ teaspoon of salt
  • 1 large egg

 

INSTRUCTIONS:

Preparing the Noodle Dough:

  1. In a mixing bowl, add ½ cup of sifted flour. Make a well in the center of the flour to accommodate the other ingredients.
  2. Sprinkle ¼ teaspoon of salt evenly over the flour.
  3. Crack 1 large egg into the well created in the flour. The egg should be slightly beaten to ease the mixing process.
  4. Use a fork to begin mixing the egg and flour together. This will help prevent lumps and ensure even distribution of the ingredients.
  5. As the mixture begins to come together, switch from the fork to working with your fingers. Knead the dough until it becomes very smooth and reaches a consistency similar to putty.
  6. Once the dough is smooth, wrap it in a cloth and set it aside for approximately half an hour. This resting period allows the gluten to relax and makes rolling out the dough easier.

 

Rolling and Cutting the Noodles:

  1. Sprinkle a breadboard or a clean surface generously with flour. This will prevent the dough from sticking.
  2. Roll out the dough onto the floured surface five or six times, each time rolling it thinner than before.
  3. On the final roll, aim to make the dough as thin as possible without tearing it.
  4. Roll the dough lightly into a cylindrical shape, similar to a jelly-roll.
  5. With a very sharp knife, start at one end of the rolled dough and cut it into slices. If you intend to use the noodles for soup, cut them approximately ⅛ of an inch wide. For noodles to be served with a sauce, cut them wider, about ⅜ of an inch.
  6. After cutting, use your fingers to gently shake the noodle ribbons apart. Allow them to dry for approximately half an hour.

 

Cooking the Noodles:

  1. To cook the noodles, bring a pot of salted water to a rapid boil.
  2. Drop the noodles into the boiling water and cover the pot.
  3. Let the noodles boil for about twenty minutes or until they are tender.
  4. Once cooked, drain the noodles thoroughly.
