INGREDIENTS:

 

Peanut Butter Layer

  • ¾ cup (194 g) creamy no-stir peanut butter (soy-free if needed)
  • 3 tbsp (45 ml) pure maple syrup
  • 2 tbsp (30 ml) nondairy milk (soy-free if needed)
  • 1 tsp pure vanilla extract
  • ¾ cup (67 g) gluten-free oat flour (spooned and leveled or weighed)

 

Chocolate Peanut Butter Ganache

  • ⅓ cup (56 g) vegan semisweet chocolate chips (soy-free if needed)
  • ¼ cup (65 g) creamy no-stir peanut butter (soy-free if needed)

 

INSTRUCTIONS:

 

Make the Peanut Butter Layer

    • Line a 9 x 5–inch (23 x 13–cm) loaf pan with parchment paper.
    • In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the peanut butter, maple syrup, nondairy milk, and vanilla.
    • Beat with a hand mixer or the stand mixer until well mixed.
    • Add the oat flour and mix to incorporate.
    • Press the mixture evenly into the prepared loaf pan.

 

Make the Ganache

    • In a small, microwave-safe bowl, combine the chocolate chips and peanut butter.
    • Microwave in 15-second intervals, stirring in between each, until the mixture is smooth and creamy.

 

Assemble

    • Pour the chocolate peanut butter ganache over the peanut butter layer in the loaf pan.

 

Chill

    • Refrigerate or freeze the layered mixture until it sets, which takes about 1 to 2 hours.

 

Slice and Store

    • Once set, remove from the pan and slice into eight bars.
    • Store the bars in an airtight container in the fridge or freezer.
