  • 1 1/2 teaspoons cornstarch, dissolved in 1 tablespoon of mushroom soaking liquid or water
  • 20 ounces of silken tofu, cut into cubes

 

INSTRUCTIONS:

  1. Prepare the Mushrooms: Begin by soaking the Chinese dried black mushrooms in 4 cups of hot water for at least 20 minutes or, if preferred, overnight. This soaking process rehydrates the mushrooms and allows them to release their rich flavors into the liquid. Reserve the soaking liquid for later use.
  2. After soaking, remove the stems from the mushrooms and slice them into thick pieces (approximately 1/2 inch).
  3. Sauté the Aromatics: In a large skillet, heat the vegetable oil over medium heat. Once the oil is hot, add the sliced onions, chopped ginger, scallions, and garlic.
  4. Sauté the aromatic ingredients until the onions become translucent, which should take about 5 minutes.
  5. Enhance with Mushroom Flavor: Pour 1 cup of the reserved mushroom soaking liquid into the skillet. This liquid carries the concentrated umami essence of the mushrooms, imparting a deep, savory flavor to the dish.
  6. Add salt, the hoisin sauce mixed with Asian sesame oil, and rice vinegar to the skillet. Stir the ingredients together and allow them to simmer for 5 minutes.
