Active: 15 minutes

Total: 25 minutes

Serves: 2

INGREDIENTS:

  • 3 Eggs
  • 2 cups Button Mushrooms, sliced
  • 1/2 Red Onion, thinly sliced
  • 1 tablespoon Olive Oil
  • 3 tablespoons Feta Cheese, crumbled
  • Pinch of Salt

INSTRUCTIONS:

  1. Prepare the Onions and Mushrooms: Slice half a red onion into 1/4-inch-long slices. Clean the button mushrooms and then slice them into 1/4-inch-long slices. In a sauté pan, heat the olive oil over medium heat. Sauté the onions and mushrooms in the pan until they become tender. Remove the onions and mushrooms from the pan and let them cool on a dry cooking towel.
  2. Preheat the Air Fryer: Preheat your air fryer to 330°F (166°C).
  3. Whisk the Eggs: Crack the three eggs into a mixing bowl and whisk them thoroughly until well beaten. Add a pinch of salt to the beaten eggs and mix it in.
  4. Prepare the Ramekin: Spray the top and bottom of a 6-ounce ramekin with a thin layer of pan mist to prevent sticking.
  5. Assemble and Cook the Frittata: Pour the whisked eggs into the prepared ramekin. Add the sautéed onions and mushrooms to the eggs. Sprinkle the crumbled feta cheese over the mixture. Place the filled ramekin in the air fryer basket.
  6. Air Fry the Frittata: Cook the frittata in the air fryer for 10 to 12 minutes, or until a knife inserted into the center comes out clean. The frittata should be golden brown and set.
  7. Serve and Enjoy: Carefully remove the ramekin from the air fryer and let it cool for a minute. Run a knife along the edges to loosen the frittata, then slide it onto a plate. Slice and serve your delicious Mushroom and Feta Frittata immediately.

TIPS:

  • Mushroom Selection: When choosing button mushrooms, look for ones that are firm and free of blemishes. You can also experiment with different mushroom varieties for unique flavors.
  • Whisk Eggs Thoroughly: To achieve a light and fluffy texture in your frittata, whisk the eggs vigorously until they are well beaten and slightly frothy.
  • Properly Grease the Ramekin: Make sure to evenly coat the ramekin with a thin layer of pan mist to prevent the frittata from sticking.
  • Check for Doneness: The frittata is ready when a knife inserted into the center comes out clean. Be cautious not to overcook, as it can lead to a dry frittata.

This Mushroom and Feta Frittata is a flavorful, satisfying dish that’s perfect for a cozy breakfast or brunch. With the help of your air fryer, you can effortlessly create a restaurant-quality meal at home. Enjoy the savory goodness!
