MAKES 1¼ cups
INGREDIENTS:
- 1 tbsp butter
- 1 shallot, diced
- 2 cloves garlic, minced
- 2 cups mixed sliced exotic mushrooms (cremini, shiitake and oyster)
- ½ cup dry white wine
- ½ cup whipping cream (35%)
- pinch each salt and pepper
- 1 tbsp chopped fresh parsley
DIRECTIONS:
- In a skillet, melt the butter over medium heat.
- Add the shallot and cook until softened, about 2 minutes.
- Add the garlic and cook for 1 minute.
- Add the mushrooms and cook over medium-high heat until softened and no liquid remains, about 5 minutes.
- Add the wine, reduce heat and simmer for 4 minutes.
- Add the cream, salt and pepper, and simmer until thick enough to coat the back of a spoon, about 2 minutes.
- Stir in the parsley.
