  • 1 bunch fresh collard greens, cooked until tender in boiling water and chopped, or 2 (10-ounce) packages frozen chopped collards

 

INSTRUCTIONS:

  1. Heat the olive oil in a large soup pot over medium-high heat for about 1 minute.
  2. Add the mushrooms, chopped onion, carrot, celery, garlic, bay leaves, marjoram or oregano, rosemary, salt, and pepper to the pot. Cook until the vegetables have significantly softened and are stewing in their natural broth, which takes approximately 15 minutes.
  3. Stir in the pearl barley and vegetable stock or water. Bring the soup to a full boil, then reduce the heat to a medium simmer. Continue cooking until the barley is tender, which should take about 40 minutes.
  4. Add the cooked and chopped collard greens to the soup. Allow them to cook for an additional 10 minutes, ensuring they blend harmoniously with the other ingredients.
