INGREDIENTS:

  • 2 tablespoons neutral oil, like corn or canola
  • 5 fresh or dried shiitake mushroom caps, soaked in hot water until soft if dried, sliced
  • 1 medium onion, chopped
  • 8 ounces cleaned squid, tentacles halved, bodies sliced into rings, or more shrimp, peeled
  • 1 3/4 cups short-grain white rice
  • 1 cup peas, fresh or thawed frozen
  • 4 cups Dashi or water, or more as needed
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin (or 1 1/2 teaspoons honey mixed with 1 1/2 teaspoons water)
  • 8 ounces shrimp, peeled and cut into small pieces
  • Salt if necessary

 

INSTRUCTIONS:

  1. In a large pot with a lid or a Dutch oven, heat the neutral oil over medium-high heat. Add the sliced mushroom caps, chopped onion, and squid (if using all shrimp, skip the shrimp for now). Cook, stirring occasionally, until the edges of all three ingredients turn brown, approximately 10 minutes.
  2. Reduce the heat to medium and add the white rice. Stir until combined, then add the peas and dashi (or water), along with the soy sauce and mirin. Stir well, reduce the heat to medium-low, and cover. After a minute, check if the mixture is simmering and adjust the heat as needed. Cook for 15 minutes.
  3. Remove the cover; the mixture should still be slightly soupy (add a little dashi or water if it has dried out). Now, add the shrimp and stir. Raise the heat slightly and cook until the rice is tender, and the mixture is moist but not soupy.
  4. Taste the Kayaku Gohan and adjust the seasoning as needed. Serve this delightful one-pot dish, filled with flavorful rice, succulent seafood, and tender vegetables, and savor the delicious symphony of Japanese-inspired flavors.
