- 1/2 tbsp (75g) unsalted butter
- 1 cup onions, finely chopped

- 1 tbsp (15g) flat-leaf parsley, chopped
- 8oz (225g) mixed wild mushrooms, diced
- 4 tbsp milk
- Salt and freshly ground black pepper
- Grated nutmeg
- 4 tbsp all-purpose flour
- 1 1/4 quarts (1 1/4 liters) vegetable or chicken stock
- 4 tbsp sour cream
INSTRUCTIONS:
- Heat half the butter with the onion, garlic, and parsley in a sauté pan and cook for 3 minutes. Add the mushrooms and sauté for another 3 minutes. Pour in the milk and season with salt and nutmeg. Cook for a few more minutes and set aside.
- In another saucepan, melt the remaining butter. Remove the pan from the heat and beat in the flour. Return the pan to low heat and cook until the mixture deepens in color. Remove the pan from the heat once more, and add the stock gradually by the ladleful. Stir constantly to keep lumps from forming, and return the pan to low heat.
- When all the stock has been combined with the flour, add the mushroom mixture and the juices. Bring to a boil and simmer for 15–20 minutes. Season with salt and pepper to taste. Spoon a tablespoon of sour cream into each bowl and serve.
