For you raspberry and blackberry lovers, here’s a quick and tasty dessert.

YIELD: 5 servings

INGREDIENTS:

  • 1 package (4-serving size) sugar-free raspberry gelatin
  • 1 cup boiling water
  • 2 teaspoons lemon juice
  • Grated rind of 1/2 orange
  • 3/4 cup frozen blackberries, partly thawed
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon Splenda (optional)

 

INSTRUCTIONS:

  1. In a blender, combine the gelatin, water, lemon juice, and orange rind. Blend for 10 to 15 seconds until the gelatin is dissolved.
  2. Add the blackberries to the blender and blend again, just enough to incorporate the berries into the mixture.
  3. Place the blender container in the refrigerator for approximately 10 minutes, or until the mixture begins to thicken slightly.
  4. Pour 3/4 cup of heavy cream into the blender and blend for another 10 to 15 seconds, ensuring that all the ingredients are well mixed.
  5. Pour the mixture into 5 or 6 dessert cups. Refrigerate to allow the dessert to set.
  6. In a separate bowl, whip the remaining 1/4 cup of cream with vanilla and a teaspoon of Splenda (if desired) until it reaches a whipped cream consistency.
  7. Once the dessert has chilled and set, garnish each cup with a dollop of the whipped cream mixture.
  8. Return the dessert cups to the refrigerator until ready to serve.

 

PER SERVING:

  • 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 2 grams of protein.
