INGREDIENTS:

  • Half box of Fry’s Meat Free Mince
  • 4 medium-sized bell peppers
  • 1/2 cup of cooked rice
  • 1/2 medium onion, chopped
  • 2 cloves of garlic, chopped
  • 1 teaspoon of olive oil
  • 1 1/2 cups of diced tomatoes
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of Italian herbs
  • Salt and pepper to taste
  • Vegan cheese, shredded, or vegan mayonnaise (as desired)

INSTRUCTIONS:

Preparing the Bell Peppers:

  1. Wash the bell peppers and carefully cut off the tops.
  2. Remove the seeds and membranes from inside the peppers.
  3. Add cubes of vegan cheese to the peppers and set them aside.

Cooking the Filling:

  1. In a skillet, heat olive oil (or water) over medium heat.
  2. Stir in the chopped onion and garlic and sauté until they become translucent.
  3. Add the Fry’s Meat Free Mince, diced tomatoes, Worcestershire sauce, Italian herbs, salt, and pepper to the skillet.
  4. Cook the mixture until the meat-free mince is heated through, which should take a few minutes.

Combining the Filling:

  1. In a large mixing bowl, combine the cooked rice with half of the sliced vegan cheese.
  2. Add the meat-free mince mixture to the bowl and stir to blend all the ingredients together.

Stuffing the Bell Peppers:

  1. Carefully stuff the bell peppers with the prepared mixture.
  2. Top each stuffed pepper with a spoonful of leftover diced tomatoes and additional vegan cheese.

Air Frying the Stuffed Peppers:

  1. Arrange the stuffed peppers upright in the Air fryer basket. If necessary, slice a thin portion off the bottom of the peppers to ensure they sit evenly.
  2. Air fry the stuffed peppers at 200°C (390°F) for about 10 minutes. For a smoother texture, you can cook them longer.

Optional Vegan Cheese Alternative:

  1. If you prefer not to use vegan cheese, you can top the stuffed peppers with vegan mayonnaise instead. Simply add it before baking and continue until they are fully cooked.

TIPS:

  • Customize the seasoning to your liking by adjusting the amount of Italian herbs, salt, and pepper.
  • Experiment with different vegan cheese varieties for added flavor diversity.
  • Ensure the stuffed peppers are stable in the Air fryer basket to prevent them from tipping over during cooking.
  • If you prefer a softer texture for the peppers, extend the cooking time in the Air fryer.
  • This recipe is versatile, allowing you to adapt it to your dietary preferences and spice preferences.
