Shiraae, also known as mashed tofu salad, is a delightful and traditional Japanese dish that combines the creaminess of tofu with the nuttiness of sesame seeds, the savory richness of miso, and the freshness of green beans. This vegetarian salad is not only a feast for the senses but also a nutritious addition to your dining table. In Japanese home cooking, a vibrant array of vegetable side dishes is a common sight, offering a symphony of colors, textures, and flavors. From simmered greens to Western-style salads and steamed vegetables, these side dishes provide a complete and balanced meal experience. Shiraae, with its blend of tofu and greens, is a perfect embodiment of this culinary tradition.

Cooking Time: 30 minutes

Serving Size: 2

INGREDIENTS:

  • 7 oz. silken tofu
  • 9 oz. green beans
  • 1 teaspoon soy sauce
  • ⅛ teaspoon kosher salt
  • 1 tablespoon sugar
  • 2 teaspoons miso
  • 4 tablespoons white sesame seeds

INSTRUCTIONS:

  1. Gather all the ingredients to ensure a smooth cooking process.
  2. Begin by draining excess moisture from the silken tofu. Place the tofu on a plate or tray, and then put another plate or tray on top. Add a heavy object on the upper tray to allow the tofu to drain. Let it drain for about 30 minutes.
  3. While the tofu is draining, bring a large pot of water to a boil.
  4. Boil the green beans until they are crisp-tender, ensuring they remain vibrant green in color. This should take just a few minutes.
  5. Once boiled, drain the green beans and rinse them under cold running water to stop the cooking process. Set them aside.
  6. Cut the green beans into small bite-sized pieces horizontally. Add soy sauce to the cut green beans and toss them to coat evenly. Set this mixture aside.
  7. In a separate pan, toast the white sesame seeds over low heat. Continuously toss and turn them until they turn golden brown and become fragrant. Be careful not to burn them.
  8. Once toasted, crush the sesame seeds into small bits and combine them with the green beans.
  9. In a mixing bowl, crumble the drained tofu into fine pieces using your hands.
  10. Add sugar, miso, and salt to the crumbled tofu, and mix them together until well combined.
  11. Now, combine the tofu mixture with the green beans and sesame seeds. Gently toss them together to create a harmonious blend of flavors and textures.
  12. Taste the Shiraae and adjust the salt and sugar to your liking.
  13. Your homemade Shiraae can be served immediately for a delightful dining experience, or you can refrigerate it for about 30 minutes to serve it chilled.
