This is our vegan version of classic loaded burritos. They’re stuffed with Easy Taco “Meat”, Cilantro Lime Rice, black beans, Roasted Tomato Salsa, Fresh and Easy Guacamole, lettuce and Cheddar.

In addition to the “meat,” loaded burritos often contain other ingredients like rice, beans (commonly black or pinto beans), fresh and zesty guacamole, roasted tomato salsa, shredded lettuce, and vegan cheese. PREP TIME: 15 minutes, plus prep time for Easy Taco “Meat” and Perfect White Rice
COOK TIME: 1 to 6 minutes
YIELD: 6 burritos
INGREDIENTS:
- 6 large burrito flour tortillas (gluten-free if needed)
- ½ cup (120 g) Fresh and Easy Guacamole or store-bought
- 2 cups (333 g) Perfect White Rice, Cilantro Lime Variation (about ⅔ batch)
- 1 batch Easy Taco “Meat” (gluten-free, nut-free and/or soy-free if needed)
- 1 (15-oz [424-g]) can black beans, drained and rinsed
- 1 cup (264 g) Roasted Tomato Salsa or store-bought salsa of choice
- 2 cups (144 g) shredded iceberg lettuce
- ¾ cup (85 g) vegan Cheddar shreds or store-bought (nut-free and/or soy-free if needed)
INSTRUCTIONS:
- Warm the tortillas by microwaving them, wrapped in a damp paper towel, until warm, 10 to 20 seconds, or by heating one at a time in a large skillet over medium-low heat for 15 to 30 seconds per side.
- For each burrito, spread 1 heaping tablespoon (20 g) of guacamole along the center of the tortilla, leaving room around the edges.
- Sprinkle ⅓ cup (60 g) of rice in each wrap, on top of the guacamole.
- Top with one-sixth of the taco “meat” and one-sixth of the black beans.
- Top with 2 heaping tablespoons (44 g) of salsa, ⅓ cup (24 g) of shredded lettuce, and 2 tablespoons (14 g) of Cheddar shreds.
- To form each burrito, fold in the bottom, fold in the sides, then roll tightly.
- Serve immediately.
