INGREDIENTS:
- ¼ cup minced fresh parsley
- 2 tbsp extra-virgin olive oil
- 2 tbsp sherry vinegar or red wine vinegar
- 1 tbsp minced onion
- 2 cloves garlic, minced
- 1 jalapeño pepper, seeded and minced
- ½ tsp salt
DIRECTIONS:
- Whisk together parsley, oil, vinegar, 2 tbsp water, onion, garlic, jalapeño pepper and salt.
