INGREDIENTS:

 

PEANUT BUTTER TOPPING 

  • ¼ cup (65 g) peanut butter, or nut/seed butter of choice (nut-free and/or soy-free if needed)
  • 1 tbsp (14 g) coconut oil

 

ACAI BASE

  • 4 (3.52-oz [100-g]) packets frozen açai
  • ½ cup (120 ml) nondairy milk, plus more as needed (nut-free and/or soy-free if needed)
  • 1 medium-sized to large banana
  • 1 to 2 servings plant-based protein powder of choice (optional) (nut-free and/or soy-free if needed)

 

ADDITIONAL TOPPINGS 

  • 1 cup (100 g) Peanut Butter Granola or store-bought vegan granola of choice (gluten-free, nut-free and/or soy-free if needed)
  • 1 medium- to large-sized banana, sliced

 

INSTRUCTIONS:

  1. Prepare the peanut butter topping:
    • In a small, microwave-safe bowl, combine the peanut butter and coconut oil.
    • Microwave in 15-second intervals, stirring in between, until smooth and creamy.
  2. Prepare the açai base:
    • In a high-speed blender, combine the contents of the açai packets with the milk, banana, and protein powder (if using).
    • Blend, occasionally stopping and scraping the sides, until completely blended and creamy.
    • If necessary, add more milk, 1 tablespoon (15 ml) at a time, to achieve a fully blended mixture.
  3. Assemble the bowls:
    • Distribute the açai mixture equally between two serving bowls.
    • Equally distribute the granola and banana slices between the bowls.
    • Drizzle the peanut butter mixture on top of each bowl.
  4. Serve immediately:
    • Enjoy your delicious açai bowls right away.
