This timeless recipe has been a favorite among pasta lovers for its quick and easy preparation and delightful taste. With just a few key ingredients, it’s a go-to dish for busy weeknights or late-night cravings.

In this dish, the quality of the olive oil plays a crucial role, so it’s best to use extra virgin olive oil for its rich flavor and aroma. Let’s dive into the variations and create a delicious pasta experience with this time-honored Italian recipe.

MAKES: 4 servings

TIME: 30 minutes

INGREDIENTS:

  • Salt
  • 1/3 cup extra virgin olive oil, or more as needed
  • 2 tablespoons minced garlic
  • 1 or 2 small dried red chiles, or hot red pepper flakes to taste (optional)
  • 1 pound long, thin pasta, like linguine or spaghetti, or any other pasta
  • 1/2 cup chopped fresh parsley leaves (optional)

INTRUCTIONS:

  1. Bring a large pot of water to a boil and add salt.
  2. In a small skillet or saucepan, combine the olive oil, minced garlic, and dried red chiles (if using). Let the garlic sizzle gently until it turns golden, approximately 3 minutes. If the pasta is not ready yet, turn off the heat.
  3. Cook the pasta until it is tender but not mushy. Drain the pasta, reserving some of the cooking water.
  4. Reheat the garlic and oil mixture briefly if needed. Toss the cooked pasta with the sauce, adding more oil or pasta-cooking water if the mixture seems dry. Adjust the seasoning to taste and toss in the chopped fresh parsley if using.

VARIATIONS:

  • Linguine with Garlic, Oil, and Anchovies: Add 4 to 6 anchovy fillets to the oil along with the garlic. Mash the anchovies until they break down and dissolve into the oil.

  • Linguine with Garlic, Oil, and Fresh Herbs: Toss in a mixture of 1 cup or more of fresh herbs, such as parsley, basil, chervil, tarragon, dill, thyme, or chives. The mixture will absorb the oil, so add more oil or pasta-cooking water when tossing with the pasta. Garnish with more chopped herbs.

  • Linguine with Garlic, Oil, and Bread Crumbs: In a large skillet over medium heat, toast 1/2 cup bread crumbs in olive oil until golden and fragrant. Remove the bread crumbs with a slotted spoon and continue with the recipe. Stir in the crunchy bread crumbs as a garnish just before serving.

  • Linguine with Garlic, Oil, and Chickpeas: Add about 1 cup of cooked chickpeas to the cooked garlic-oil mixture and warm gently. This variation works well with cut pasta like ziti, penne, or shells.

  • Linguine with Garlic, Oil, and Nuts: Use chopped walnuts, almonds, hazelnuts, pecans, or pine nuts, and add anchovies if desired. Toast the nuts in olive oil until fragrant before adding the garlic and chiles. Continue with the recipe from Step 1.

Pasta Aglio e Olio offers a myriad of flavors and textures to please any palate. The variations allow you to create a custom pasta dish that suits your tastes and preferences, making it a versatile and delightful addition to your culinary repertoire. Whether you’re in the mood for a simple, classic version or an adventurous twist, Pasta Aglio e Olio delivers an unforgettable pasta experience with every bite.
