SERVES 8

INGREDIENTS:

  • 1 (16-ounce) bag dried black-eyed peas
  • Enough water to cover the black-eyed peas by 1 inch
  • 2 teaspoons salt (optional, adjust to taste)
  • 1 teaspoon liquid smoke (optional, for added flavor)

INSTRUCTIONS:

  1. Rinse and Soak Black-Eyed Peas: Start by rinsing 1 (16-ounce) bag of dried black-eyed peas under cold running water. This helps remove any dust or impurities from the peas. After rinsing, transfer the black-eyed peas to a large container or bowl. Cover the peas with enough water, ensuring there is approximately an inch of water above the peas. Allow the black-eyed peas to soak overnight. Soaking rehydrates the peas and reduces their cooking time.
  2. Boil Black-Eyed Peas: After soaking, drain the water from the black-eyed peas and rinse them once more. In a large pot, add the black-eyed peas and cover them with fresh water. Bring the water to a boil over high heat and let the peas boil for approximately 10 minutes. Boiling partially cooks the peas and helps remove any remaining impurities. After boiling, drain the black-eyed peas.
  3. Transfer to Slow Cooker: Place the partially cooked black-eyed peas in a 4-quart slow cooker. Add enough water to cover the peas by about 1 inch. If desired, season the peas with 2 teaspoons of salt for added flavor. You can also add 1 teaspoon of liquid smoke to enhance the taste of the peas. Both the salt and liquid smoke are optional and can be adjusted to suit your taste preferences.
  4. Slow Cook the Black-Eyed Peas: Set the slow cooker to medium heat and allow the black-eyed peas to cook for about 5 to 6 hours. Check the peas around the 5-hour mark to see if they have reached the desired level of tenderness. Continue cooking if necessary to achieve the desired texture. Slow cooking ensures that the peas become tender without overcooking.
  5. Adjust Seasoning (Optional): Taste the cooked black-eyed peas and adjust the seasoning if needed. You can add more salt or liquid smoke if desired, customizing the flavor to your liking. Remember that beans tend to absorb seasonings as they cook, so it’s best to taste and adjust toward the end of the cooking process.
  6. Serve or Store: Once the black-eyed peas are done cooking, drain any excess liquid using a colander. You can serve them immediately as a side dish, incorporate them into various recipes, or store them in an airtight container in the refrigerator for future use.
