MAKES: ABOUT 2 CUPS
INGREDIENTS:
- 1 cup granulated sugar
- 1 cup water
- 3 or 4 dried cayenne chiles
- Zest (in strips) and juice of 3 medium limes
INSTRUCTIONS:
- Combine the sugar, water, and dried chiles in a small saucepan.
- Bring the mixture to a boil over medium heat, stirring occasionally to ensure the sugar is fully dissolved.
- Add the lime zest and juice to the saucepan.
- Remove the saucepan from the heat and allow the mixture to steep for 20 to 30 minutes, letting the flavors infuse.
- After steeping, pour the mixture through a fine-mesh strainer into a jar or bottle to remove the chiles and zest.
