INGREDIENTS:

 

FOR MASHED POTATOES 

  • 2½ cups hot water
  • 2 tablespoons butter
  • ½ cup margarine
  • 1 teaspoon salt
  • 2½ cups Idaho potato flakes
  • ¾ cup milk

 

FOR GRAVY

  • 1½ tablespoons melted shortening
  • 3 tablespoons bread flour
  • 2 tablespoons all-purpose flour
  • 1 (10-ounce) can condensed chicken stock
  • 1 (10-ounce) can-full of water
  • ¼ teaspoon salt
  • 1/8 teaspoon Accent seasoning
  • 1/8 teaspoon ground black pepper
  • 2 chicken bouillon cubes
  • 1 (10-ounce) jar Franco-American beef gravy
  • Pinch of ground sage

 

INSTRUCTIONS:

 

MASHED POTATOES

  1. Heat the water in a saucepan, then add the butter and margarine.
  2. Stir in the salt and cook for 2 minutes to dissolve the salt.
  3. Add the Idaho potato flakes and mix until the mixture resembles regular mashed potatoes.
  4. Gradually add the milk to achieve the desired consistency for the mashed potatoes.

 

GRAVY

  1. In a separate saucepan, prepare a roux by combining melted shortening and 1½ tablespoons of bread flour. Cook over low heat for about 5 minutes, stirring constantly until the roux turns a milk chocolate color.
  2. Remove the roux from the heat and add the remaining flour, then slowly pour in the condensed chicken stock, water, and other gravy ingredients, making sure to prevent lumps from forming.
  3. Bring the mixture to a boil and let it boil for 2 minutes to thicken.
  4. Reduce the heat and continue to simmer the gravy until it reaches the desired consistency.
  5. Spoon the prepared gravy generously over the mashed potatoes and enjoy this flavorful and comforting dish.
