INGREDIENTS

For the Dough:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs

INSTRUCTIONS

  1. Prepare the Dough:
    • In a saucepan, combine the water, unsalted butter, and salt. Bring the mixture to a boil over medium heat.
  2. Add the Flour:
    • Once the mixture is boiling, remove it from the heat and quickly stir in the all-purpose flour until it forms a smooth, cohesive dough.
  3. Add Eggs:
    • Add the eggs one at a time, stirring vigorously after each addition until the egg is fully incorporated before adding the next one. The dough should be smooth and glossy.
  4. Heat the Oil:
    • In a deep saucepan or a deep fryer, heat enough vegetable oil to submerge the Zeppole to a temperature of about 350°F (175°C).
  5. Shape and Fry the Zeppole:
    • Use a spoon or a pastry bag to drop small portions of dough into the hot oil. You can shape them into rounds or puffs, depending on your preference.
    • Fry the Zeppole in batches, being careful not to overcrowd the pan, for about 2-3 minutes on each side or until they are golden brown and puffed up.
    • Use a slotted spoon to remove the fried Zeppole and place them on paper towels to drain any excess oil.
  6. Serve:
    • While the Zeppole are still warm, dust them generously with powdered sugar.
    • Optionally, drizzle them with honey for extra sweetness and garnish with lemon zest.
  7. Enjoy:
    • Serve the Zeppole immediately while they are still warm and crispy.
