INGREDIENTS:

  • 2 tablespoons butter
  • ¼ cup diced onion
  • ¼ cup diced green pepper
  • 1/8 cup water
  • 4 eggs
  • ¼ teaspoon salt
  • ¼ cup diced tomatoes
  • ¼ cup cooked and diced bacon
  • ¼ cup cooked and diced ham
  • ¼ cup cooked and sliced sausage links
  • ¼ cup diced deli roast beef
  • ¾ cup shredded Cheddar cheese

 

INSTRUCTIONS:

  1. In a skillet on medium heat, melt the butter. Add the diced onions and green peppers to the skillet.
  2. In a mixing bowl, add water, eggs, and salt. Stir and beat well.
  3. Pour the egg mixture into the skillet and cook for 1–2 minutes to let the egg set. Add the diced tomatoes and all the cooked meats, along with ½ cup of shredded cheese.
  4. Fold the omelette in half and top with the remaining shredded cheese.
  5. Serve the omelette with salsa and sliced green onions for added flavor and freshness.
