INGREDIENTS:

  • 1 Fryer Chicken, sliced
  • 2 Garlic Cloves
  • 2 Canned Chipotle Peppers
  • 2 cups of Buttermilk
  • 1/2 cup of Lime Juice
  • 3 teaspoons of Kosher Salt
  • 2 Eggs
  • 2 cups of All-Purpose Flour
  • 2 teaspoons of Black Pepper
  • Chopped Cilantro (for garnish)

INSTRUCTIONS:

Marinate the Chicken:

  1. Place the chicken pieces in two large zip-top plastic bags.
  2. In a blender, combine the garlic cloves, chipotle peppers, buttermilk, lime juice, 2 teaspoons of salt, and eggs. Blend until the mixture is well combined.
  3. Pour the marinade into the plastic bags, ensuring that it fully covers the chicken pieces. Seal the bags and refrigerate for a minimum of 6 hours, up to 24 hours, to allow the flavors to meld.

Prepare the Coating:

  1. In a small bowl, whisk together the all-purpose flour, black pepper, and the remaining 1 teaspoon of kosher salt until well combined. Set this mixture aside until it’s time to coat the chicken.

Coat and Fry the Chicken:

  1. Remove the chicken pieces from the marinade and allow any excess buttermilk to drain off.
  2. Coat each chicken piece with the flour mixture, ensuring it’s evenly covered. Set aside.
  3. Heat oil in a deep fryer or a large, heavy-bottomed pan to 400°F (204°C).
  4. Carefully add a few pieces of chicken to the hot oil, making sure not to overcrowd the frying bowl. Cook until the chicken turns golden brown and reaches an internal temperature of 165°F (74°C). This usually takes about 20 minutes.
  5. Remove the cooked chicken from the oil and place it on a paper towel-lined plate to drain any excess oil. Check for doneness; if needed, cook for an additional 5-10 minutes until the chicken is cooked through.
  6. Repeat the frying process for the remaining chicken pieces.

Serve and Garnish:

  1. Arrange the Buttermilk-Marinated Chipotle Fried Chicken on a serving platter and garnish with chopped cilantro for a fresh and vibrant touch.
